Vendimia 2010
Por primera vez vendimiamos el Xarel.lo en Octubre, es tardísimo pero debido al giro climático y las lluvias en Septiembre no ha sido posible hacerlo antes. Vendimiamos a mano ya que se trata de unas cepas muy viejas de los años 60 cuales son demasiado frágiles para ser cortadas con la maquina. La uva esta a 11 grados, la concentración de azúcar y de acidez esta en su punto optimo.
Queremos lograr un vino compacto, bien aromático y por supuesto sabroso. El Xarel.lo aporta al cava cuerpo y estructura mientras cuando el Macabeo proporciona dulzura y aroma y la Parellada por ende frescura.
Aparte del cava quisiéramos hacer un vino blanco fermentado en barrica a base de Xarel.lo y Macabeo; un vino delicado con cuerpo que recuerde los últimos días del verano.
Ayer durante la vendimia recibimos visita de Winepleasures quienes están haciendo una seria sobre la vendimia en Catalunya!
Harvesting the Xarel.lo
For the first time we are harvesting the Xarel.lo in October, really late but due to the climatic twist and the September rains it has not been possible to do it earlier. We are harvesting manually because these are very old vines from the 60 ies which are too fragile to be cut by the machine. The grapes have reached 11 degrees and the concentration of sugars and acidity is in its optimum.
We are aspiring for a compact, aromatic and tasty wine. Xarel.lo usually adds body and structure whereas Macabeo gives sweetness and fragrance and Parellada finally supplies the wine with freshness and finesse.
Besides Cava we are planning to make another white wine with Xarel.lo and Macabeo; fermented in barrel; a delicate wine with body and structure that reminds of the last days of summer.
